"My thanks to you was delayed pending the final swallow of this delicious rum cake. We just finished it last night. We ate small pieces in order to savour it as long as possible. It was wonderful. The cake remained moist after being opened for five weeks. Of course we kept it refrigerated. Before eating each time, we would place small pieces in the microwave oven on defrost for thirty seconds.
